Loaded Breakfast Burritos

  • 8 patties from 1 bag Country Cousin Pork Sausage Patties

    5 slices Bar-S Fully Cooked Bacon

    12 eggs

    ½ cup Hiland Sour Cream

    1 teaspoon chili powder

    ½ teaspoon ground cumin

    ½ teaspoon garlic salt

    ¼ teaspoon ground black pepper

    2 tablespoons (or ½ a 4-ounce can) chopped green chilies

    1 red bell pepper, chopped

    2 jalapeno peppers, chopped

    1 cup shredded cheddar cheese

    18 ea Small Flour tortillas, warmed

  • Step 1Warm sausage patties and bacon microwave according to package directions. Let cool, then crumble. In a large bowl, whisk eggs with sour cream, chili powder, cumin, salt, pepper and green chiles. Set aside.

    Step 2In a large nonstick skillet, sauté bell pepper and jalapeno peppers over medium heat for 5 to 7 minutes. Once tender, add eggs. Add crumbled sausage and bacon. Stir continually until eggs are done.

    Step 3Fill each tortilla with about 1/3 cup egg mixture and a sprinkle of cheese. Fold into burritos. Wrap each in aluminum foil to keep warm until serving. Serve with salsa and Hiland Sour Cream.
