  • 6 Cups De Vine or Ozarka Water, Cold

    2 tsp Black Peppercorns

    10 Whole Cloves

    1 Small Star Anise

    6 Cardamom Pods

    1 2-inch Piece Fresh Ginger, sliced thinly

    2 Cinnamon Sticks

    6 bags Darjeeling Tea

    2 Cups Dairy Pure, Whole Milk

    1/3 Cup Andrew’s or Cheatwood’s, Pure Raw Honey

  • Step 1Place the peppercorns and cloves in a medium saucepan, and crush slightly using a large serving spoon.

    Step 2Add the cardamom and anise, crushing again with a spoon.

    Step 3Add the water, ginger and cinnamon stick and bring to soft boil.

    Step 4Reduce the heat and allow it to simmer gently for 10 – 15 minutes.

    Step 5Add the tea, and allow it to steep for an additional 5-10 minutes.

    Step 6At this point the mixture is ready for straining a fine sieve works well.

    Step 7Add the milk and honey, and return to the heat until it has returned to a gentle simmer.

    Step 8Whisk briskly when pouring, and serve hot.
