Southern Roots Sisters Strawberry Lemonade Poke Cake

Poke cake earns its reputation the honest way. It’s dead-simple to make and impossible to stop eating. This version is a light lemon cake with a jammy filling that soaks all the way through, topped with a cloud of whip. Swap the cake mix for white, yellow, strawberry, or even angel food, and this cake delivers every time. Once assembled, keep it covered in the refrigerator for up to four days. The filling only gets better as it chills.

The star here is a jar of Southern Roots Sisters Strawberry Lemonade Jam, with its bright, sweet-tart bite threaded in every bite. Eggs from Hansen’s Eggs and Braum’s whole milk keep the batter rich and the crumb tender.

Ingredients

Preheat the oven to 350 degrees F. In a mixer, combine the lemon cake mix, eggs, vegetable oil, and milk. Mix on medium speed for 3 minutes. Pour the batter into a 9-by-13-inch pan coated with nonstick cooking spray. Scatter the chopped strawberries over the top. (They’ll sink into the batter as the cake bakes.) Bake for 35 minutes, or until a toothpick inserted into the center comes out clean.

While the cake is still warm, use the back of a wooden spoon to poke holes across the top, spacing them about 2 inches apart.

Meanwhile, pour 3/4 of the jar of Southern Roots Sisters Strawberry Lemonade Jam into a bowl. Add 3 tablespoons of hot water and stir vigorously until combined.

Pour the mixture over the cake so it seeps into the holes. Let cool for 1 hour.

Spread the whipped topping over the cooled cake. Dollop the remaining jam on top and swirl with a knife. If you’d rather skip the swirl, mix the whipped topping and jam together in a bowl first, then spread the icing over the cake. Garnish with a few fresh strawberries to take this dessert over the top.
