Peanut Butter Pretzel Energy Bites

These Peanut Butter Pretzel Energy Bites are simple to make, packed with protein and nutrients, and downright addictive. Kids and adults both love them, whether it’s breakfast on the go or an afternoon pick-me-up. The sweet and salty crunch comes from Trucker Treats Cinnamon Toast Pretzels, made by the Oklahoma gourmet pretzel company in flavors ranging from candy cane and pumpkin spice to dill pickle and bacon cheeseburger. A drizzle of Roark Acres Okie Honey adds a natural, floral sweetness. It’s hard to stop at just one.

Ingredients

  • 2 cups Trucker Treats Cinnamon Toast Pretzels
  • 1/2 cup peanut butter
  • 3 tablespoons Roark Acres Okie Honey
  • 1/2 teaspoon cinnamon
  • 1/4 cup dried raisins or cranberries
  • 1/4 cup mini chocolate chips

Crush the pretzels by pulsing them a few times in a food processor. Or, you can place them in a plastic bag and crush them into small bits with a rolling pin. (This part is especially fun for kids.)

Stir the peanut butter, honey, and cinnamon together in a medium bowl. Add the crushed pretzels, dried fruit, and chocolate chips to the peanut butter mixture. Stir gently to combine.

Roll into 15 to 20 balls on a baking sheet. Chill in the refrigerator before serving or storing.

TIPS:

  • These energy bites are best served chilled. Store them in an airtight container in the refrigerator for up to a week. Chilling firms up the honey and peanut butter, giving each bite a fudgy texture instead of a sticky one.
  • Freeze! It’s something this snack does especially well. Add bites in a single layer to a pan that fits in your freezer and chill until solid, then transfer to a freezer bag or container for up to three months. Let the bites sit at room temperature for a few minutes before eating, or enjoy them straight from the freezer.
  • We love how well this snack travels. Pack a few in a lunch box for a super-charged midday boost.

 

Variations:

  • Roll the bites in shredded coconut, crushed pretzels, or a dusting of cocoa powder.
  • Swap the mini chocolate chips for white chocolate chips or dark chocolate chunks.
  • Add a tablespoon of chia seeds or ground flaxseed for extra fiber.
  • Swap the peanut butter for almond butter or sunflower seed butter.
  • Trade the raisins or cranberries for chopped dried apricots or cherries for a different fruit note.
