Strawberry Oatmeal Pretzel Bars
These sweet and salty bars start with a crust of flour, oats and Trucker Treats pretzels. Strawberry jam and coconut create a sweet topping. These bars are great for an after-school snack or to put in a lunchbox.

1 1/4 cups Shawnee Mills All-Purpose Flour
¾ cup quick-cooking oats
½ cup Trucker Treats Cinnamon Toast Pretzels
1/2 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup Hiland Butter, melted
2 teaspoons Griffin Foods Vanilla
1 cup Southern Roots Sisters Strawberry Lemonade Jam
2 cups chopped fresh strawberries
1/2 cup sweetened shredded coconut
- In a bowl, combine flour, oats, pretzels, sugar, baking powder and salt. Add butter and vanilla; stir until crumbly. Set aside 1 cup
- Press remaining crumb mixture into an ungreased 9-by-13-inch baking pan. Spread preserves over crust. Sprinkle fresh strawberries over preserves. Combine coconut and reserved crumb mixture. Sprinkle this mixture over the strawberries.
- Bake at 350 degrees until coconut is lightly browned, 25-30 minutes. Cool.
