Frittata For Two

This small-batch frittata recipe is great for a weekend breakfast for two. Add any of your favorite vegetables to the mixture.

  1. 1/2 pound Greers Ranch House sausage
  2. 1/2 cup diced red pepper
  3. 1/2 cup diced onion
  4. 1/2 cup Braums shredded cheddar cheese
  5. 1 tablespoon olive oil
  6. 4 Hansens eggs
  1. Cook sausage until fully cooked and crumbled. Set aside.
  2. Saute red pepper and onion. Add the browned sausage.
  3. Whisk the eggs, and add to the sausage, pepper and onion mixture.
  4. Transfer to a small greased casserole dish or a small cast iron skillet and top with the cheese.
  5. Bake in a 350-degree oven until set. Check at around 20 minutes. It may need additional cooking time. Serve immediately.
