Wild Game with Coca-Cola Marinade
An Original Recipe by Chef Kurt Fleischfresser
- 2 lbs. game meat – venison, duck breast, quail etc.
- 1/2 glass of red wine from Tres Suenos, Moonfeathers, Canadian River, Sparks, or Stone Bluff Wineries
- 2 C of chicken stock
- 2 T of Garden Club Red Plum Jam
Marinade
- 1 can of Coca-Cola
- 2 cloves garlic
- 1 C red onion, sliced thin
- 2 T cracked pepper
Instructions
Combine Coca-Cola, garlic, red onion and cracked pepper. Stir until well mixed. Add about 2 pounds of game meat and marinade for a minimum of 3 hours. Drain and sear the game in a heavy pan, and set aside. Deglaze the pan with a 1/2 glass of wine. After wine is reduced to a syrup, add 2 cups of chicken stock or 2 cups of water. Bring to a boil, then reduce to a simmer. Stir in 2 tablespoons of Garden Club Red plum jam, and place game back in the sauce and simmer until completely cooked. Transfer the game to a plate and spoon the sauce over top.
