Ultimate Spice Cake

- 2 cups Shawnee Mills All-Purpose Flour
- 1 1/3 cups sugar
- 4 tsp. baking powder
- 1 tsp. baking soda
- ¾ tsp. cinnamon
- ½ tsp. ground cloves
- ½ tsp. ground allspice
- 1 cup mild salsa*
- ½ cup shortening
- 2 large eggs
- 1/3 cup water
Icing
- 4 cups powdered sugar
- 8 oz. cream cheese
- 1 ½ tsp. Griffin's Vanilla Extract
- 2 T Hiland Butter, softened
Instructions
Preheat oven to 350 degrees. Grease and flour two 8-inch cake pans. In a large bowl mix all the dry ingredients. Add salsa and shortening beat for 3 minutes at medium speed. Add eggs and water beat for another 3 minutes at medium speed. Pour into floured pans. Cook for 28-30 minutes. While cake is baking, mix powdered sugar, cream cheese, vanilla and butter in a medium bowl. Beat until creamy. Allow cake to cool and frost. *Contestant used Maria Rae's Level 1 Salsa.
