Tiramisu Trifle

An Adapted Recipe by Kimberley Bevins

A delicious combination of coffee, pound cake, creamy mocha mousse, and crunchy bits of toffee in every bite - it's a little heaven on a spoon!

  • 2 loaves (10.75 oz each) frozen pound cake, thawed, cut into cubes
  • 1 cup Neighbor's Coffee, chilled
  • 2 boxes (2.8 oz. each) mocha mousse mix
  • 8 oz. mascarpone cheese, at room temperature
  • 2 tbsp. cocoa powder
  • 1 cup toffee bits
  • Garnish: Hiland Whipped Cream, chocolate shavings, if desired.

Instructions

In a large mixing bowl, prepare mocha mousse mix according to package directions. With mixer at low speed, beat in mascarpone cheese until smooth.   Assemble trifle as follows, in a trifle dish, or any large, clear glass dish: Place half of the pound cake cubes in bottom of dish. Sprinkle lightly with ½ cup of the chilled coffee. Spread half of the mousse mixture over top of cake, going almost to the edge of the dish. (Leave a little space so it will look pretty!) Dust with cocoa powder, and sprinkle ½ cup of toffee bits. Repeat layers to use remaining ingredients, saving a few cubes of cake to place on top as garnish.

Tip: Individual trifles can be prepared in pretty crystal goblets, or any other clear, stemmed glass for elegant service. This is a decadent recipe for entertaining friends and family - enjoy!
