Southwest Pork Stew
An Adapted Recipe by Kitchen Kimberley
- 1 lb. Chef’s Requested Pork Loin Chops, cubed
- 2 C cubed red potatoes
- 1 C chopped celery
- 1 white onion, chopped
- 1 red bell pepper, coarsely chopped
- 3 cloves garlic, chopped
- 1 (4 oz.) can green chiles
- 2 C chicken broth
- 1 C Ironhead Salsa (mild or medium)
- 1 T dried oregano
- 1 ½ T chili powder
- 1 ½ t ground cumin
Instructions
Place all ingredients in a large crock pot; stir to blend well. Cover and cook on low for 6 to 8 hours, or on high for about 4 hours. Serve with corn tortillas, a dollop of Hiland sour cream, and garnish with lime wedges, or fresh cilantro. Enjoy!
