- 2 C thinly sliced sweet onion, such as Vidalia
- 1 T extra virgin olive oil
- 1 T balsamic vinegar
- 1/2 t kosher salt
- 1 C Hiland Sour Cream
- 3/4 C mayonnaise
- 1 t garlic salt
- 1 t onion powder
- 1/2 t ground white pepper
- 1/2 t dried dill weed
Instructions
Preheat oven to 400 degrees. On a shallow baking sheet, toss together sliced onions, olive oil, balsamic vinegar and salt. Roast for 20 minutes, stirring after 10 minutes; remove and cool completely. Meanwhile, in a medium bowl, blend remaining ingredients. When onions are cool, chop coarsely, and add to sour cream mixture. Cover and refrigerate for 2 hours to allow flavors to marry. Serve with your favorite chips or fresh veggies. Enjoy!
