Pineapple Glazed Ham

- 1 (1 lb.) ham steak
- ¼ C Garden Club Pineapple Preserves
- ¼ C packed brown sugar
- 1 T soy sauce
- 1 T. teriyaki flavored baste and glaze
- 1 can (15.5 oz.) pineapple slices, drained
Instructions
In a small bowl, blend pineapple preserves, brown sugar, soy and teriyaki sauce. Place ham steak into a gallon sized zip-top plastic bag. Spoon marinade over ham; seal bag and refrigerate at least 20 minutes, or up to 8 hours. When ready to cook, remove steak from bag, and place onto medium-heated grill, or nonstick skillet. Cook for 3 minutes on each side; remove from skillet to platter. Cover to keep warm. Add drained pineapple slices to grill or skillet, and cook for 2 minutes on each side. Serve with ham. Yield: 4 servings – ¼ lb. of ham, and 2 pineapple slices each
Mashed Sweet Potatoes
- 3 large sweet potatoes, peeled, cut into chunks
- ¼ C Garden Club Pineapple Preserves
- ¼ C Hiland Sour Cream
- 2 T Hiland butter
- salt, to taste
Instructions
In a saucepan, boil sweet potatoes until tender – about 20 minutes. Drain very well, then return to pan. Add remaining ingredients; whip to desired consistency. Taste, and season if necessary.
