Oklahoma Picnic Sandwich

  • 1 large loaf rustic Italian bread, such as focaccia
  • 2 ½ tsp. dijon mustard
  • 1 tbsp. balsamic vinegar
  • ¼ cup Garden Club Sandwich Spread
  • ¼ cup extra-virgin olive oil
  • Bar-S Salami slices, to taste
  • ½ of a red onion, thinly sliced
  • Longhorn-style cheddar cheese, thinly sliced, to taste
  • Crisp green leaf lettuce, to taste
  • Bar-S Extra-Lean Hickory Smoked Ham slices, to taste
  • 1 cup roasted red pepper slices
  • ½ of an English cucumber, thinly sliced
  • Pepper jack cheese, thinly sliced, to taste
  • Schwab’s Finest Bologna, thinly sliced, to taste

Instructions

Split loaf in half horizontally; set aside.  Prepare vinaigrette dressing by whisking together the Dijon mustard, balsamic vinegar, sandwich spread, and olive oil in a small bowl.  Spread the vinaigrette over the cut sides of Focaccia loaf. 

Layer sandwich ingredients in the order listed over the bottom half of bread; place top layer of bread over sandwich filling, and press down firmly.  Wrap sandwich tightly in plastic wrap.  Place in refrigerator with a weight, such as a heavy cast iron skillet, or a wrapped brick on top of sandwich; chill for 1 to 2 hours.  Unwrap and slice into serving pieces.  Enjoy!
