JM Farms Mushroom Stew

An Original Recipe by Chef Kurt Fleischfresser
  • 1 lb. of assorted JM Farms Mushrooms – crimini, button, oyster, or portabella
  • ½ cup thinly sliced yellow onion
  • 2-3 cups of chicken stock or broth
  • ½ dry breadcrumbs
  • 2 tbsp. parsley
  • salt and pepper

Instructions

Sear mushroom and onion in shallow dutch oven. Add salt and pepper. When brown, deglaze with ½ cup of dry white or red wine and add 2-3 cups of chicken stock or broth. Bring to a boil with ½ cup of dry breadcrumbs and 2 tablespoons of parsley. Chill for later use or serve immediately.
