Double Baked Sweet Potato
- 6 sweet potatoes
- 1 lb. pack of JC Potter Sausage (Italian Sausage for Dinner or Lunch and regular sausage for Breakfast)
- 1 yellow onion diced
- 1 ½ cups grated cheddar cheese
- ½ cup Hiland Butter
- 1 tsp. of chopped parsley
- 1 cup of dry bread crumbs
- pinch of crushed red pepper
Instructions
Bake the sweet potatoes until soft. Brown the sausage and onion in a skillet. Cut the sweet potatoes in half and scoop out the insides. Mash the sweet potato with the rest of the ingredients and return to the sweet potato shell, bake in 350 degree oven until golden and bubbly (approx 35-40 minutes).
