Dinner Sausage Stew
An Adapted Recipe by Kitchen Kimberley
- 1 sweet yellow onion, cut into chunks
- 1 C celery, cut into ½-inch diagonal slices
- 1 C carrot, cut into chunks
- 4 cloves garlic, minced
- 4 C beef broth
- 1 pkg. (16 oz.) Bar-S Dinner Sausage, sliced
- 1 lb. mini red potatoes, cut into bite-sized pieces
- 1 can (14.5 oz.) stewed tomatoes, with liquid
- 1 med. yellow squash, halved, then sliced
- ½ small head cabbage, cored, cut into bite-sized pieces
- 1 T Worcestershire sauce
- 1 T paprika
- 1 t dried leaf basil
- 1 t dried leaf oregano
- 1 t sugar
- 1 t kosher salt
- ½ t freshly ground black pepper
Instructions
In a large pot or Dutch oven, sauté onion, celery, carrot and garlic with 2 tbsp. of the beef broth until tender, about 5 minutes. Add all remaining ingredients; bring to a boil, then reduce heat to simmer. Cook uncovered, stirring frequently, for approximately 30 minutes, or until vegetables are tender. Enjoy!
