Cris' Lemon Sugar Cookies

  • 1 cup Hiland Unsalted Butter, softened
  • 1 ½ cups powdered sugar, sifted
  • 1 egg
  • 1 tsp. Griffin's Vanilla Extract
  • ½ tsp. lemon extract
  • 2 ½ c. Shawnee Mills All-Purpose Flour
  • 1 tsp. baking soda
  • 1 tsp. cream of tartar
  • 1 cup granulated sugar (for rolling the cookie dough balls)

Instructions

In a large mixing bowl, cream together the butter, powdered sugar, egg, vanilla, and lemon extract.  In a separate bowl, combine the flour, baking soda, and cream of tartar.  Add the dry ingredients to the batter ¼ cup at a time, until fully mixed. 

Refrigerate cookie dough for 1 hour.  Preheat oven to 375 degrees.  Roll the dough into small balls, and then roll the balls in the granulated sugar.  Place the balls on a greased cookie sheet, about 1-inch apart.  Bake for 8 minutes, or until lightly browned on the bottom.  Remove cookies to a wire rack to cool completely.  Enjoy!
