Butterscotch Butter Balls

An Original Recipe from Timeless Treasures by Kitchen Kimberley
  • ¾ cup Hiland Butter, softened
  • ¼ tsp. salt
  • ½ cup powdered sugar
  • ½ tsp. rum extract
  • 1 ¾ cups Shawnee Mills All-Purpose flour
  • 1 (6 oz.) pkg. butterscotch morsels
  • 1 cups finely chopped pecans

Instructions

Preheat oven to 350 degrees. Cream together the butter, salt, and powdered sugar until fluffy.  Add extract, and gradually blend in flour until well mixed.  Mix in butterscotch morsels and pecans.  Shape dough into balls about 1-inch in diameter.  Bake on ungreased cookie sheet about 18 minutes or until delicately browned.  When cookies are cool, roll in powdered sugar, if desired.  Store in airtight container.  Enjoy!

Variations:  Substitute peanut butter or cinnamon morsels for another ‘melt in your mouth’ cookie to enjoy!  Also, vanilla extract can be used in place of the rum extract.
