Buffalo Chili
An Original Recipe by Kitchen Kimberley
- 2 lbs. ground buffalo
- 1 med. yellow onion, chopped
- 4 cloves garlic, minced
- 1 can (28 oz.) diced tomatoes
- 1 can (31 oz.) chili beans
- 1 can (15 oz.) black beans, drained
- 1 can (15 oz.) tomato sauce
- 1 ½ T paprika
- 3 T chili powder
- 2 t ground cumin
- 1 t kosher salt
- ½ t cayenne pepper (more to taste)
Instructions
In a large skillet, brown ground buffalo with chopped onion until meat is no longer pink. Stir in garlic, cook and stir one additional minute. Transfer meat mixture to a 6-quart crock-pot. Add all remaining ingredients; stir to combine well. Cover and cook over low heat for 2 to 3 hours. Enjoy! Great with corn chips or tortilla chips, and/or topped with shredded cheddar cheese. Garnish with sliced green onions, if desired. Feeds a crowd!
Note: This recipe can also be made in a large pot on the stove, instead of in the crock-pot. Just let it simmer gently, uncovered, for about 1 hour, or until desired consistency. Enjoy!
